Bamboo shoots usually appear in April. `Shoot´ is the word for the part of any plant that you first see appear out of the ground.
Some bamboo shoots are dug up when they are less than a metre tall and are eaten. They are quite hard and it takes a lot of effort to dig them up! You can see them in supermarkets, where they are usually sold already boiled and sliced, prepared with dashi. Dashi is a kind of Japanese cooking stock.
